Gnocchi

Our friend came over today and instructed us on how to make homemade sweet potato gnocchi. It was soooooo delicious. It’s not difficult, but kind of labor intensive. At one point we were all standing at the tiny kitchen counter working on them. We have some leftovers, but I’m so full from it right now I can’t ever imagine eating again. We just microwaved the sweet potatoes until they were thoroughly cooked, added a little bit of brown sugar, ricotta, parmesan and flour.

You roll the dough into logs, cut into small pieces and then score with a fork so that the sauce sticks

Boil until floating

Eat! We fried them in a brown butter sage sauce and served them over arugula. Awesome.

    Bert says they used to make gnocci but they never made “sweet potato” gnocci!1 Grammy
